Beans
Beans are probably the best plant food you can eat! They’re an excellent source of hearty, low-fat plant protein and fiber. Simmered in soups or blended into tangy spreads, beans are a versatile and delicious introduction to the power of food. Soluble fiber from foods such as beans, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease. A small serving of beans or lentils supplies at least 4 grams of soluble fiber. They also contain important vitamins and minerals such as folic acid, iron, potassium and zinc. With the bonus of their antioxidants, you have a nearly perfect food!

A Rainbow of Colors
The rainbow of colors in fruits and vegetables mirrors the rainbow of health benefits they provide. These colors are the result of disease-fighting phytonutrients like lycopene (found in red tomatoes) and beta-carotene (found in orange carrots).
